If you love avocado like I do, then you might be curious as to what else you can make with it.
Well my hungry self had no idea what to eat earlier and already had this basic idea in mind of what I wanted to try earlier in the week. But of course I was distracted by all things baby and kept putting it off, until today!!!
Well this was it!
Avocado Summer Rolls!
I don't have all the ingredients I originally wanted to include. But I made due with what I could. And still loved the outcome!
I used
-1 avocado
-Alfalfa Sprouts
-Green Leaf Lettuce
-Salt
-Chili Powder
-Rice Spring Wrappers
I love alfalfa sprouts! Delicious and nutritious! I'll tell you how!
One cup of alfalfa sprouts supplies 2.7 milligrams of the 75 to 90 milligrams of vitamin C you need each day for a strong immune system and healthy skin.
A serving of alfalfa sprouts supplies small amounts of bone-building calcium and potassium for healthy muscles and a normal heart beat.
You also get tiny doses of magnesium, iron, folate and vitamin A from a serving of alfalfa sprouts.
Alfalfa sprouts are one of the most significant dietary sources of phytoestrogens, which are beneficial compounds in plant foods that can help reduce your risk of heart disease, cancer and osteoporosis!
The phytoestrogens in alfalfa sprouts might reduce symptoms of menopause as well.
Alfalfa sprouts contain compounds called saponins, which can help lower your LDL, or bad, cholesterol while also increasing your HDL, or "good" cholesterol.
Saponins might also help boost your immunity.

While avocados have a high caloric count (one avocado is 320 calories), the various nutrients and “healthy” fats make it a must-eat. Some call the avocado the alphabet fruit because of all the vitamins it contains. One avocado provides your body with vitamins A, C, E, K and B6, along with an enormous amount of potassium and “healthy” fat. Perhaps the biggest health benefit of avocados is that by adding avocado to certain foods, you can improve your absorption of nutrients
Avocadoes provide all 18 essential amino acids necessary for the body to form a complete protein. Unlike the protein in steak, which is difficult for most people to digest, avocado protein is readily absorbed by the body because avocadoes also contain fiber.
Directions:
To loosen the rice paper you submerge them in warm water until soft.
Layer your ingredients to your liking.
I did avocado, sprinkled a bit of salt and chili powder, then the alfalfa sprouts, then some green leaf lettuce.
Lastly roll like you would a burrito.
These are not my prettiest creations because I didn't have enough of the ingredients but I loved them so much I HAD to post!
I dipped mine in Light soy sauce, but you could do your favorite dipping sauce.
